Suggestions for Christmas Pork

Hi all, it's been a while since I've visited. 2 questions...[p]1) Doin' pork for Christmas day and looking for suggestions (both cut of meat and prep/cooking suggestions). We are having 6 adults and 2 children[p]2) What are the dates for the Q-Babe Q-Fest in Ocala? I need to make reservations.[p]Banker John

<p />Banker John, I did this one for Thanksgiving. I only brined for 14 hours. Coated with Dizzy Pig's Raging River Rub. Used apple and pecan for smoke. Cooked to 150° interal. This IS a KEEPER!
