Hey Guys
Got a nice batch of pig's tails. Need some help on how I should prepare them. Check the search and couldn't find anything.
Any help would be great, thanks

Shane

    maybe smoke then pickle??????

sorry, but that sounds like a challenge!

Edna Staebler in Food that Really Schmecks - provides this recipe for pigtails - it's always been my favorite. I've not adapted it for the egg - so you'll have to play with it.

Roast tails at 300 F for 3 or 4 hours (she has them on a rack in a covered pan). Pour off all fat then dip or coat with the following sauce.

    1 cup tomato sauce
    1/2 cup tomato paste
    1 cup brown sugar
    1 tsp dry mustard
couple of dashes of Worcestershire sauce
    salt and pepper

    Don't forget napkins and bibs!
