Saving Chilis?

A co-worker came by and gave me a nearly full grocery sack of Anaheim chilis.

My first thought was to grill'um all and then freeze.
What would be a good way to save them?
How long will they keep in the frig?

    You done good on roasting them. Portion them up and freeze. Up to a year....some years I get a whole bushel and ends up in da freezer a year and a half. Still cool. Not much longer though.

    loco-engr, looks as if you're going to have some good cooks in your future! :)

    I like to prep my roasted peppers soon after roasting by peeling and seeding and cutting them up for use in chili or whatever. I also save the juices and oils that emanate from the chiles. I freeze them promptly. I know it's easy to prep chilis by freezing them whole, but I love the convenience of just cutting open a bag of chilis, easy peasy.
  • One other way and one extra step you can do with roasted. Take your roasted peppers and seed them and then put them in a jar and cover with olive oil - they will last forever in the fridge if they are kept covered in olive oil.
    2nd method - put them on a rack and dry them. Once they are dried I put them in a jar with the lid NOT completely sealed. They will last forever.
