here is a picture of my set up. ...inverted plate setter .. little green bge feet, then roasting pan (bge feet created sufficient air flow under pan to prevent direct burning). .. .there was plenty of room. .. [p]

If not, it's tenderloin for everybody.[p]LOL[p]p.s. the funny thing is, she reads this forum every day. She may become a first time poster today to let me know what we're eating Sunday...

one thing i've determined from reading what a lot of others experienced. . .if you are using a throw away aluminum pan. . .double or triple them up. . . from what i heard, most people using one, even with a sufficient heat barrier, still had problems with the dripping scorching/burning off. .. i think if you tripled them up, you'd have a pan similiar in thickness to what i used. . ..

the calphalon are nice. ..but be WARNED. .. measure the thing first to make sure it fits. ..i have a wonderful calphalon roasting pan that i got as a gift about the time i got my egg. .. i've never used it, cause its square and its just a little too big to fit in the egg. ..

Mike Dodd, a very simple way to fit a 20 lb bird in the large egg is to use a plate setter with feet up and place an ordinary drip pan (I use the broiling pan that came with my oven) on that and put the turkey in a v-rack in the broiling pan.

someone bought me a beautiful w s turkey pan a few years back. the bottom i use for huge soups and the top as a serving platter. for the egg however, the most used pan i have is a simple carbon steel paella pan that i bought for about 3 bucks at a yard sale. its about 15 inch round with 2 inch sloped sides. works good for seafood casserole, as a heat barrier, as a turkey pan, as a drip pan for pork butts etc. it is almost black from use and about as non stick as my cast iron. you can put a vrack in it, or put the grill directly on it. it even works good for paellas, but not in the egg, moisture retention kills a good paella

Todd,[p]Venture down to the 85 access road heading North from Shallowford and go to Atlanta Fixtures. They should have something that would work, you could also get a pizza peel, some of those huge plastic cups that the restaraunts serve Swate tea in, and, and, and....[p]Sorry was getting carried away.[p]I used to hate Atlanta Fixtures when I was in the industry, now as a regular old consumer without the access to resources I used to have, I love Atlanta Fixtures.

Mike Dodd,[p]We must have short turkeys where I am. I smoked a 22lb turkey on a vertical turkey rack in a Wal-Mart disposable drip pan, without any problem. I had to cut around the neck so that I could slide the turkey completely onto the rack and the wings rested on the pan. Four and a half hours later at 300 deg it was perfect.
