Salmon stew

Here is one quick meal and will make you hurt yourself eating. Today at work, I put this together for the fellows.
In a large pot, I put 5 pounds of potatoes diced, two large yellow onions diced, salt and pepper. Fill pot about 3/4 full of water. Started boiling. After 25 minutes of boiling, I added 4 cans of pink salmon, one small bottle of catsup,no Heinz here, about half of small bottle of squeeze butter, and one can of evaporated milk. Stir it up and get out the crackers. Eat until you blow up. Another quick meal of southern tradition by Chef Jerry.

    This was my Dad's recipe...I have cooked it many times.

    Yankee’s Cat Fish Stew[p][p]3 lbs catfish, cooked & de-boned (fillets are easier!!)
    4 slices fatback
    3 lbs potatoes, peeled & thinly sliced
    3 lbs onions, thinly sliced
    2 tbs salt
    2 tbs pepper
    hot pepper sauce[p]Boil catfish (reserving broth), de-bone and set aside. Over high heat, in large Dutch oven, brown fat back. Lower heat; discard fat back (or when no one is looking, eat it…it’s delicious & once a year won’t kill ya!!), leaving drippings in pan. Add one layer of potatoes & one layer of onions. Top with all of the fish. Repeat layers of potatoes and onions. Pour about half of the broth over top. Add several dashes hot pepper sauce & salt & pepper. Do not stir!! Cover and let simmer for approximately 2 hours. Just before serving, stir well. Yield 6 to 8 servings.

  • YB, thanks YB, I've put that in my recipe file. I love soups and stews better than anything. So much so, by chance last night we had some turkey soup left over and also some beef stew, my wife said "which one you want" and I said BOTH. I just could pass on either one.

    I love soups and stews also...Last we had shrimp casserole and french onion soup...I told my wife this morning I would like beef stew tonight.

    I am a bridge builder for many years. I have a nice shop and it also works for a kitchen. I cook stuff for the fellows a good bit. Did some deer cube couple of weeks ago. They love the salmon stew so I put one together.
    Might do some pull pork on the Egg for the fellows for Christmas lunch. [p]Jerry

    Wow. Bridge building is a challenging job. Very cool. I have known some friends that made bookoo bucks painting the Chesapeake Bay Bridge in the summer, hanging on ropes a few hundred feet above the bay. I would have done it as a college student if there was a bridge nearby. But I eneded up making half as much $$ working in an ice cream factory. LOL.[p]Hope I was not too harsh in response to your post last night. Canned salmon and tater stew just did not sound too good to me at the time. Okay....it still doesn't. :-) Holiday pulled pork for the fellers?? Now that sounds good.[p]Cheers onya. And happy holidays.
