I usully do Turkey (on the Egg of course) for Christmas dinner but wonder what people suggest instead.[p]Any experience with Goose? Beef? ... who knows. We tend to be about 20 people and I'll want to use the Egg for sure.[p]All suggestions are most welcome. I'll research them, get a menu plan, lobby the family ... and come the 25th roast a big turkey like always. But hey, a boy can dream can't he?![p]Thanks[p]

toronto james,
We always have a nice bone-in spiral cut ham. The left overs will end up getting used for the New Years Day grub of black eyed peas. They's supposed to bring good luck for the upcoming year.[p]Brews,
Matt.

South O,
AS a tradition in my family, I get a fresh ham, put it in large pan and boil it until it starts to fall apart, using only salt and cracked pepper as seasoning. Slice the ham, put on bread with mayo, lettuce and tomatoe. Some good southern eaten.[p]Jerry

toronto james,
I'm thinking Beef Braciole, Lasagna, Risotto, Salad, Fresh Sourdough Bread. [p]There's also a couple of packer cuts in the freezer that need cooking, maybe along with some ribs. Either way it's going to be something a little out of the ordinary...[p]

toronto james,[p]Pistachio crusted lamb with peasant sauce and goat cheese mashed potatoes (it's an Emeril recipe).[p]
[p]I'll probably do some boneless roasts, butterflied, crusted, then rolled. They're a little less costly than the racks and I'll have a crowd to feed.[p]Tonia

toronto james,
Did a goose years ago, 14lb. Stuffed with apples and prunes that had marinated in Amoretto for two days. Turtle soup for the first course and homeade Kahlua ice cream for dessert. Now that was a meal to remember.
