Gil Gowing,[p]While the recipes below are OK, we prefer to cook duck lo-n-slo since there is enough fat to keep evreything moist. Indirect at 225-235 for 4-5 hours produces a tender, moist duck with crispy skin, make sure that you put a bunch of holes (with a knife) into the skin before cooking in order to let the fat drip out. Enjoy!
