I'm right down the road from Fred's Music and BBQ, and got notice of Fred's upcoming Turkey Event in a month or so. Reading up on Max's method, I wanted to give it a try...before I hopefully meet the man and watch him do his thing. I also used Tasty Licks Poultry Brine on the bird before heading into Max's method.
It was awesome...and as he claimed, the gravy is OUTTA this world! I've had family asking for Turkey the last 2 weekends after having this first one!
Thanks a bunch Max!
Ended up trying to be Pitmaster...Gravy on my kettle (I had just bought it 'used' that week). Had to have things ready to go outside, could've been better prepared....have too good of a fire going on the kettle.

Jason, that looks great. It must be pretty neat living so close to Fred.

Thanks Steve!
There is this sort of 'Que Vibe' going on at Fred's on a Saturday when I get over...especially during/after the recent number of classes he's hosted. Lots of people just talking BBQ, it's very, very cool. One can learn things just from hanging around and chatting with customers, let alone the staff. Wife likes it as it takes my constant BBQ talk out of the house and away from her for a bit, and it'll be real easy for family buying Xmas gifts for me.
I can't go in the place without dropping $50...and that's when I'm under control. Yes, I've now got both an Egg and general BBQ problem. -
jason. ..

That looks perfect to me. I did one so far and like your family, mine raved about it.Dave San Jose, CA The Duke of Loney

Jason the bird looks GREAT!!! Really nice color on it. BTW There is a reason I always show "The Raws" first on my post. Makes things sooo much easer if its all there togeather!

Mark,
Thanks for both links.
I was looking in the recipe section of the forum. It never cross my mind to look on the "nakedwhiz" website.
Thanks AgainMarc -
Forgive the question, but did you brine the turkey? I read and watched the links you posted and did not see anything about brining. Thanks from another local PA guy. I look forward meeting you @ Fred's Turkey Fest.
