Turkey Pot Pie

Yup, that's the easy way to get rid of those turkey leftovers. Cut up some taters and carrots, some chunks of turkey, and throw in some leftover veggies or get some frozen peas, corn, lima beans, and what have you. Make a roo (sp?) of 3 tbsp butter and 3 tbsp flour, add some stock and half and half (leftover turkey gravy works if you have it) to make a nice cream sauce, toss in all the turkey and veggies, stir it up and pour it in a store-bought pie crust in a deep dish pan. Cover it with another pie crust, poke a few holes, and bake for an hour and fifteen minutes. Carpe Ovum and I ate half a nine inch deep dish tonight between the two of us, and it was eggcelent! Give it a try! Beats the hell out of "flaming turkey wings..." [p]Happy aftermath![p]Kelly

    i am having the same thing tonight. I already made the pie dough, cooked the vegetables, and turkey meat off the bone.
    All that's left is to make the roux & mix in the above with chicken broth (Swanson brand is the best) and pour into the pie dough, cover with a pie dough top, brush with yellow of an egg, make vent holes & bake at 400F til golden brown.
    Serve with Yellow Tail Chradonnay.[p]Life is good :>))

    you inspired me tonight!!!. . .stopped at the grocery, picked up a frozen deep dish pie crust and a couple of the refrigerated pie doughs for the top (hey, how easy can you get). . just cubed up a couple of taters (i'm parboiling them for about 5 minutes to make sure they are soft, wasn't sure from your post if you stuck em in raw). .. going to cut up some turkey in a few minutes. .. going to use some of my killer gravy and stir in some fresh cream. . .i'll let you know how it turns out, but no reason it shouldn't be good. .. .[p]what a great idea. .sure beats the usual of just warming up the turkey in gravy.. .[p]thanks kelly!!!
