I just gotta ask...what are the green blotches? fresh parsley or a paste of parsley?

RRP,[p]I did an herb paste of thyme, rosemary, sage, basil, oregano, parsley, butter, garlic, and olive oil. I cut the skin away from the meat and stuffed the paste under the skin, the rubbed the remainder on top of the skin.[p]I'm too lazy for a brine, so this is what I came up with. Hope it turns out well . . .[p]TRex
