Mad Max Turkey Cook time

Please help with a cooking time question. I have an 18 lb turkey that I am goig to do in accordance with Mad max's directions. I have seen a couple of different estimates here - what is the estimated cook time at 325 degrees?[p]Thanks,

    I would suggest going by temps, not time, Mike. Every turkey I have done (20+) in the Egg has taken less time than it would in a regular oven for whatever reason, but the times aren't consistent. Start a little earlier than usual and if the bird is done (160°+ in breast, ~180° in thigh) early, wrap in foil and throw in a warm cooler until dinner time. IMHO, turkey benefits from the hot rest as much as brisket or butts.[p]Jim
  • JSlot, as usual Mr Slot you are right on target, good advice. I never like to think about time per pound.

    i usually figure about 15 minutes per pound, but like the other guys said, go by internal temp and [p]1. when you poke it deep with a skewer, the juices should run clear, and
    2. when you wiggle a drumstick, it should rotate freely on its joint. .. [p]then you know its done. .[p]good luck

  • Hi Mike, [p]I did Mad's turkey (23#) on Sunday and I took it off at 7 hours - it turned out fine. I could've taken it off at 6-1/2 hours though, looking back. Give yourself a cushion and out it on a little earlier than you figure.[p]Jeff
