A few quick questions for Max

Thanks so much for the recipe but I have a few quick questions:
1. When you say "Quarter another apple and throw it directly in the roasting pan around the bird." do you mean in the pan or on the rack?
2. How much water should I be putting into the pie plate?
3. Is it OK if the bottom of the V-Rack doesn't actually sit on the bottom of the roasting pan as long as it is stable?[p]I think that will do it. Thanks again - looking forward to the big day.[p]

    1. quartered apple in the bottom of the roasting pan. .that way the apple roasting,will add its juices to the drippings that you are pulling up with your basting bulb and basting the bird with. ..you are constantly recycling the misture of butter, wine, juice from the bird when basting . . .[p]2. if you are using the water filled pie plate under the roasting pan as a heat deflector/barrier, keep adding water sufficient to keep it from going dry. ..check it every time you baste the bird, adding water as necessesary. .[p]3. yea, i guess that's ok. . .[p]good luck[p]max
