When the breast reaches a polder 165, I remove the wings & legs. I wrap the turkey in film 905 & place it in a styrofoam container. [p]While the turkey is resting, the thighs are in the egg until they reach 180.[p]The body of the turkey wraps easier with our the wings & legs & you don't overcook the breast while smoking the legs to the correct temp.[p][p]
