doc,
I just egged a 13 # turkey Saturday. 325 dome temp for 5 hours got the breast up to 165 and the thigh to 172. I also iced the breast down for 30 minutes before the cook, 20 minutes should be fine. Never had a better, more juicy bird. look in the archives for Mad Max's turkey 101.[p]Is there a reason you want to go down to 250 dome?
