i would never poke fun at loney ,, cause what does not get used for loney gets made into scrapple ..
it was good ,, a bit salty from the lobster stock, but all tender and good

it was skinned but after an internet search ,,, i deboned and removed all the silver skin.. good thing too.. silver skin is really tough ,,, fun with japanese knives tonight

looks like a nice fresh light cook. where are you, bill, that you have access to fresh seafood like that? nice variety.
i have been looking for baby octopus (it is wonderful grilled), but have had to settle for the 2 or 3 pounders.
like the skate wing idea, too. i went fishing with a friend once, and all day, as we caught the skate, his father would stab them and hack them and throw them back calling them a trash fish. was repulsive.
glad to see someone enjoying it.

Hey Bill, looks good, Must have been a pain cleaning that wing. We used to kill them as a kid "bait stealer's"! Now you can find them in high end restaurants. Had one grilled at a Todd English place and stuffed with crab meat. Good stuff.

There's nothing wrong with raw oysters.
Have you ever tried throwing them on the egg, before shucking them, for just a minute or two?
We pull them as they open, let them cool for a minute, shuck, & eat. My kids were eating (and loving) them at the age of 4. -

Sure wish I could prep a skate wing like that. Must be nice to be possessed of such instruments and skill.

i did have fun playing with the knives and the yanagiba is scary sharp out of the box the deba needs some touch up...
if you are where you said you were going better watch your weather for tomorrow don't want you to float away. -
oh yea i put a bunch on the mini and pull them off as soon as they open,, every time i get a delivery i plan on plating raw, egged and rockefeller and posting pictures and what happens is,,,, i pour a glass of wine , stand at the sink and eat them as fast as i can open them.

skate wing was skinned but ALL the silver skin has to be removed but i have the right knives never had it before but did a little research and am thinking of eggin one and serving with browned lemon butter the same way i do monk fish...

it is huge store and while this cook used frozen mixed seafood they have fresh baby octopus and 3 different types/sizes of squid .. next one will all be fresh.
salt pepper butter lemon garlic lobster stock paste from resaurant depot.. way better than clam juice for seafood soups and such..
if you are ever looking for asian ingredients let me know .. this place has stuff you have never even dreamed of.. vinegar shaped bottles stuffed with minnows
bulgogi sauce, yakitori sauce, i saw a $48 bottle of japanese vinegar yesterday.

i don't head down town to eat but i cannot imagine a plate like that going for less than $30 in center city .. $25 in the burbs if you could find it..
i am thinking i should do this agian this week end but with all fresh ingredients.. wait for tonights pics.. chicken feet!! -

really a joy to use
using the shigafusa is somewhat like prepping with a samurai sword .. friends and family tend to stay out of the kitchen when i use it :laugh: -
thanks molly it was good i bought the ingredients with out much of a plan.. never had skate wing so i bought it then went on line to figure out how to prep and cook it.
