Best Brisket Ever
Spring Chicken
Posts: 10,255
First, let me say that I've eaten good and great brisket all my life. I've even gotten to where I cook a decent brisket. So when I hear someone else say they cook a good brisket I just smile and say show me.
So Spring Hen and I were invited up to Lake Conroe Egger's for brisket last night. Yes, to show us what he can do.
WOW! This one had to be the very best brisket I've ever eaten... period.
No sauce, just tender juicy flat and point slices. The point was just a little better because of the fat but either would have won a taste contest.
Here's some snapshots.
Frank watching closely as the Eggs do their thing.

Flat and point ready for cutting

Flat and point sliced and ready to eat.

So when Lake Conroe Egger says he makes a good brisket, believe him.

Man, I could dive into that. Just give me a bottle of ketchup and turn me loose.__________________________________________Dripping Springs, Texas.Just west of Austintatious

"Ketchup!!!" I think he keeps a gun in the house for people like you LOL.
Don't worry Gary, I learned his secret (he uses a Big Green Egg). I can do that...
Here he's slicing the point.
I can do that.

Nice smoke ring. That's my biggest challenge on a brisket. Mine are tender and flavorful, but no smoke ring.

Boy I think you are right..that does look good. Nice setup he has there too.Dave San Jose, CA The Duke of Loney

LOL! Before I even read spring chickens reply post, I was thinking"ketchup?!? " for shame!! Haha. I have my very first brisket coming off the egg shortly...I sure hope it tastes as good as Conroe Eggers looks!

I cooked a brisket yesterday and did not look anything like that. Oh, forgot, I put mine in the grinder twice before cooking in the egg
Good looking brisket!Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
This is a good post for those of us who struggle with briskets, 'cause when you say:
"let me say that I've eaten good and great brisket all my life. I've even gotten to where I cook a decent brisket."
it just shows that even a decent brisket takes a whole lot of learning. -
Best when you enjoy iy with good friends

Someone said a while back to throw a couple of brickettes in with your lump. Must be the crap in brickettes that does the trick.
I also heard that you should chill the meat before putting it in the Egg. Takes longer to warm up while the smoke doesn't care if it's hot or cold meat.
I just shoot mine with my smoke ring gun.
Much easier and lots of fun.

Yea, I read your post and now I've got to try it. But before I order a grinder attachment or grinder I think I'll just ask the butcher to do a brisket for me. Looks and sounds good though.

If yours tastes as good I assure you there will be more briskets in your future.

His setup is nice. Even overlooks a pool and lake.
Spring "Overlooks What's Cooking" Chicken -
You got that right. Looks easier than it really is, even for experienced cooks. This one was what everyone strives for. Frank admitted that he went through a lot of them before he got it down pat.
No injection, no foil, no tough as boot leather.
Spring "Sharper Knives Do Not Make For Tenderer Briskets" Chicken -
It certainly looks good! Any secrets to share????
-
I haven't cooked a brisket in a long time. I guess I nee to get my butt in gear. Great post Leroy.
-
Absolutely Beli. Food just tastes better that way.
But you know that very, very well.
There's also another upside, guests don't complain. LOL
Spring "Friends Don't Ask For Sharper Knives" Chicken -
Yes, move to Conroe, Texas and ask Frank to be your friend LOL
He just cooks the flat and point separate, no injection or foil, rub on the outside and about 225° dome indirect to about 190° internal. Or that's the part I remember. I could be wrong, there was rum involved LOL.

Thanks... Me too. Briskets are more than just food, they're fun and challenging. Being consistent is next to impossible until you get a plan that works, including buying your meat with a critical eye. Not all cows were happy when they became 'previous' and are therefore tough from being stressed.
Spring "Happy Cows Make Tenderer Meat" Chicken -
Hee..hee....Gary I know you are teasing but I'm not. Give me ketchup with horseradish sauce and I'm a happy camper.....try it sometime with your brisket...yummyJudy

Thanks for all the kind words, Leroy, we sure enjoyed having you folks over to enjoy a nice meal together.
-
Good stuff! My brisket tends to be "good" - sure it nice to get "great" every now and again... :P
-
It was well worth the trip Frank. I'm still licking my lips. May go buy a brisket today and see if I can come close to duplicating it.
Spring "Culinarily Inspired" Chicken -
If you have achieved "good" then "great" is within your grasp. Just keep trying.
Spring "Just Twenty Briskets Away From Eggcellent" Chicken -
Sure does look good. Always on the quest for better brisket.
GG -
Yea Ken, you would have liked this one. Even so, Frank said it could have been better. Good cooks are modest when it comes to perfection.
Spring "Better Than Best Is Impossible" Chicken -
Frank,
Do you purchase yur briskets from the same place you purchase your fantastically meaty and succulent "I've never have or will taste better" beef ribs?
Whatchagonna cook in Plano???????
-
The brisket is USDA Choice on sale at Kroger for $1.29 lb.!
Can't decide on what to cook in Plano - still time. Bloody Marie's are a given, in any case. -
Uh oh, I see trouble ahead :laugh:Judy

Fine looking brisket and a great story!
-
Thanks. Yes it was a good brisket.
I'm thinking of trying one soon.
