I did a 14 pounder on sunday, the breast was 160 in 2 hours, even with a hard start to temp 300 tops. I thinks my lump was damp but worked OK. The legs could have gone another hour IMHO. Man oh man it was great anyway. Did it in a rack, breast side down first then rotated breast up later. Inverted Platesetter and a 9X13 pan below the bird. But two hours, I was unprepared!, the bird sat around for 2 hours covered in foil and towels. It was never dryed out. Vaccumed the remainder for later. Maybe pictures later
