I've got about 6 racks in foil that are about ready to pull but game doesn't start for another 4 hours. They were on direct heat at 200* for about 70min. Foil at 200 for about 80 min. Nice and moist now about to pull right off the bone. What should I do to keep them from drying out and burning them?
