Praline Yam Casserole

Does anyone have a recipe for the New Orleans Praline yams that we could fix on the Egg? It would be appreciated! I am off of work this week and loved sleeping in! Now, back to figuring out my menu. Thanks!

try this one out, never did this on the egg but can't see Yknot.[p]3 lbs. small to medium sweet potatoes, (yams) unpeeled
1/4 cup sugar
1/2 tsp ground cinnamon, divided
1/4 cup skim milk
2 tsp vanilla extract, divided
3 tbsp margarine, melted
1/3 cup all-purpose flour
1/4 cup light brown sugar
1/4 cup chopped pecans[p]Preheat oven to 400 degrees. Place potatoes on a baking sheet and cook for 1 hour or until tender. Cut a thin slice off the top of each potato and carefully scoop pulp into a bowl, leaving 1/4-inch thick shells. In a mixing bowl, mash pulp; add sugar, 1/4 tsp cinnamon, milk, and 1 tsp vanilla, mixing until smooth. Spoon mixture evenly into potato shells. Place on baking sheet. In a small bowl, mix the margarine, flour, brown sugar, pecans, remaining 1 tsp vanilla, and remaining 1/4 tsp cinnamon together until crumbly. Sprinkle evenly over potatoes. Reduce oven to 350 degrees and continue baking 15 minutes or until topping is brown. Makes 4 to 6 servings

Chef Wil,[p]Why would you use skim milk after all these other yummy things you've include?.....go for it and use cream or condensed milk instead....just my .02...[p]BTW...I've done it on the BGE and it's good...smoky but good...

by using the skim milk and margarine instead of butter and cream or condensed milk, you actually taste the smoked potato more and feel more of the potato fiber as opposed to having a richer, creamer product using the richer ingredients. Cream and butter will make a creamier product but the more defined taste of the smoke and the feel of the potato is more definite using the lighter ingredients. And its just an excuse to say it is lower in fat so we can eat more..........LOL
