i think i prefer to cold smoke. takes a LOT longer to develop any color or flavor from the smoke, but i prefer the bacon being cured but otherwise still 'raw' (uncooked, more accurately).
the losers i shared it with were too drunk to tell the difference. :laugh:
ruhlman actually suggests hot smoking. Alton Brown goes cold. ..and maybe i imagined it, but i always thought bacon was traditionally cold smoked -
correct on both counts
