Arkyguy,[p]Sure! You can brine it for awhile, but I never do because I don't like the texture and it's not on there long enough to dry out. Don't let it go above 160 degrees.[p]Lee

I do them quite often too. I like a little lemon-butter-garlic injection. Add all over your favorite rub & smoke nice & low. If you want to keep from drying out/over browning, lay it on a rib rack, put a small piece of foil under & small piece on it. Remove it for the final hour. good luck & Happy Thanksgiving!
