Mexican Adobo Rice

I was going to make some of our usual steak fajitas last night and wanted a good side dish so I tried one I found for Mexican Adobo Rice.

The recipe had a good bit of ingredients but when you prep it ahead of time, you knock it down to 4 items at the Egg.

Saute the uncooked rice in a DO over direct heat (325-350f) like you would a rice pilaf. Then add garlic.

Add in the tomato/pepper puree, stock and beer. Bring to a simmer.

Drop in the plate setter, cover the DO, and simmer for about 30 minutes until the rice is done.

Serve with lime wedges and mega-awesome fajitas :)
