Mexican Adobo Rice

I was going to make some of our usual steak fajitas last night and wanted a good side dish so I tried one I found for Mexican Adobo Rice.

The recipe had a good bit of ingredients but when you prep it ahead of time, you knock it down to 4 items at the Egg.

Saute the uncooked rice in a DO over direct heat (325-350f) like you would a rice pilaf. Then add garlic.

Add in the tomato/pepper puree, stock and beer. Bring to a simmer.

Drop in the plate setter, cover the DO, and simmer for about 30 minutes until the rice is done.

Serve with lime wedges and mega-awesome fajitas

This is a great spicy side dish for any kind of Tex-Mex main dish. If you want the full recipe, you can get it at my post on my blog: Mexican Adobo Rice.

NibbleMeThis I would say you did well

That looks outstanding...Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
That looks good, thanks!

Looks really good. I am in DO mode right now, never thought about trying rice. Thanks for the post.

The first pic has excellent "depth of field". Very nice shot.
