Dr. Chicken's Sweet Kiss of Death Injectable Marinade

I'll be doing a ham with this for Thanksgiving. Has anyone used this injectable marinade on anything other than ham? If so, what were the results?

  • BucsFanJim,[p]I tried it this past weekend on a ham and came away disappointed. After injecting and unwrapping, I had almost the same amount of liquid left over as I originally began with. I guess the ham is too dense to absorb the marinade and it mostly ran out of the holes left from the needle. Had very little flavor from the marinade, only around the fatty areas. I did like the glaze though, it was very good. [p]Just not sure it's worth the money to buy the extracts for what you get out of them. [p]Anybody have a solution?[p]Thanks,[p]Robert

    I have used it often and everyone loves it.[p]Robert to answer your question add butter to the injection and mix well. Let the butter set a little before injecting and you won't find the same results.

    Here is a repeat of my answer to you this weekend...

    I don't know what to say but I sure find the taste to be present! Now I am careful to inject easily and pull the needle out as I'm doing it and always make sure I'm in the meat and not a fat vein plus I always alter my needle angle. I even use a clean pan in which I have the ham while injecting so any excess can be collected and tried to be injected again. What about the cooking temp? - Dave's later versions suggest removing at 138 internal and then rest for 20 minutes at least for redistribution of juices. Could it be you guys over cooked it? Hey, we still have nearly a half of a ham in the refrig that I did this way and snack on it regularly. We can sure taste the marinade in the ham and are surprised you folks can't.
    PS I have jotted down Jim's butter idea and will try it next time.
