We had our neighborhood rib cook-off yesterday. These took second place. Not bad I guess. These were the best I have ever cooked and had many good comments. I will be practicing these to make them better next year.
I smoked these indirect @ 250 dome for 3.5 hrs w/ apple and cherry wood, foiled 1hr with brown sugar, apple juice then finished with sauce.

I rubbed with Dizzy Pig dust and sauced with Blues Hog. I really liked how these turned out. I took advice from many on this forum. They had great flavor and were very tender (just starting to fall off the bone). I received very high marks in all areas. Some of them marked me down a bit for tenderness. The winners were overdone so I assume they liked them totally fall off the bone done. He also went outside the box and used a sauce that had apple chunks in it. I would normally be dissapointed with 2nd because he has won three years in a row now but I believe mine were better this time around. I could have left them in the foil for another hr if I knew they liked them like stew.

I'm with you Jmo- anyone can make fall off the bone ribs, but those who know Q appreciate that perfect texture. Based on the pics those look great.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
