So now I've got it vacuum sealed in the fridge. What's the best way to reheat it tomorrow and have it be moist? A lot of times, I dries out in the reheating.
Has anyone tried putting the vacuum sealed bags into hot water and heating it up initially that way?
I don't want to screw this one up as it's for a paying gig.

I know you are dealing with a lot of butt which I have never reheated that much at one time but the way I reheat my P.P. is with the veggy steamer or any steamer you may have. I put the P.P. on pan so as not to loose the juice and steam for about 20 minutes. It come out just like it was cooked. Hot, moist, and tasty. So are you putting the pork on a steamer with holes in it and then putting that on another pan over water? I may not be understanding. Is this stovetop or in the oven?

Heck you could just reheat it right in the bags. I fill my Nesco roaster with hot water, set the temp at 200 or 250 and use that. If you have the rack, use that to keep the bags submerged. You can give them a head start in the microwave, just use a lower power setting and go a minute or so at a time or you risk bursting the bags.

You can also microwave the bags on 50 power until warm and use a crock pot to finish it off. Or an aluminum pan (covered) in a 250° oven works good. Here are some popular reheating liquids for pulled pork.
Apple juice + cooking juice
Apple juice + chicken broth
Coca-Cola
Apple juice + cooking juice + cider vinegar
Coca-Cola + chicken broth
Coca Cola + BBQ sauce
Apple juice
Apple juice + cider vinegar
Dr. Pepper + cooking juice
RC Cola + sauce
Cider vinegar + water
Vinegar + water (or apple cider)
Fruit nectar
Pineapple juice + sauce
