stuffed turkey on the Egg

Unknown
edited November -0001 in EggHead Forum
Every year we cook a turkey stuffed with sausage stuffing in the oven. Can I cook a "stuffed" turkey, say 15-18 pounds or so, on the Egg? How does the fact that the turkey is "stuffed" effect the cooking procedure and time? The sausage stuffing is basically a sage sausage that is cooked, with celery, onions, spices and moistened Pepperage Farm bread crumbs all mixed together. I do not want to make a mistake with my Thanksgiving bird!

    M.R. Martin,
You can certainly cook a turkey on the Egg. Most of us here do that. It's always better than the oven. You're obviously skilled at oven-cooking the turkey stuffed and should be able to duplicate that on the Egg. The only proviso that many make about cooking a stuffed turkey is the warning to make sure that the stuffing reaches safe, cooked temperatures. The turkey will reach its cooked temp. faster than the stuffing, and undercooked stuffing is a health hazard. Many recommend doing the stuffing separately as we do in our home. But if you are aware of this potential problem and avoid it, all should be fine. Enjoy!

  • M.R. Martin,
I agree 100% with everything Marvin said and add that since it's your first one on the egg you have even more reason than ever to want to try doing the stuffing in the oven separate from the turkey.

  • Marvin,[p]NEVER and I repeat, NEVER, NEVER cook a turkey with the stuffing IN!!! MY Mother did for years and her birds were ALWAYS dry! One year I told her to do it without the stuffing and it was moist as ever!!
Besides the health issue.........I like a moist bird, as do we all. If you start the stuffing with enough liquid (stock, wine or whatever) you should have a moist stuffing as well.[p]Good Luck, Paul
