Labor Day Cook, Butt, Brisket, Sausage, Dogs & CB

Just the perfect time to do a big BBQ.

No pictures of these two meats but we had hot dogs, sausage and Corn Bread.

17 lbs of Boston Butt on the medium egg.

I didn't see any need to post the pulled pork results.

All the probes were the DigiQII, the Maverick ET-73 and a meat probe from the Stoker.

When slicing there was some visible moisture which quickly got absorbed back into the meat. Very tender and tasted wonderful. When a piece was put in the mouth you could taste the moisture. All in all, for me, a very good brisket cook.

I am thinking the only way to get it more moist is to inject. Yet something else to try.
