<p />Somebody stop me! OK I promise, last movie for a while.[p]This time I'm posting a time-lapse movie of a sparerib cook. I remember the first couple of times I bought a cryovac sparerib, and when I opened it up I had no idea what to do with it, or how to cut it up. So maybe this post will help someone get over that first hurdle.[p]So here we go, a sparerib cook. Starts with the meat right out of the cryovac wrapper, rinsed and patted dry. I cut it up, rubbed it with a basic rub then covered it and set it aside while I fired up the egg. You can see in a couple of frames me using the charcoal sieve I made to sift out the ash and little pieces of charcoal from a previous cook. Then we get to watch the egg do its thing, while the shadows grow. Finally, the ribs are done & I pull them off. I've become fond of eating them dry, so as to enjoy the rub and smoke.[p]Enjoy![p]Chuck
