Marine Cook,
Keep experimenting with it, when I first got my mini I never gave it it`s due, as I had a large and a small and was perfectly comfortable with them.....as time has gone on I find more and more wonderful things the mini can do....keep it coming..[p]Wess

Marine Cook,
Ok, you can't post all these mouth watering pictures without recipes. Really though, the pork chops look very yummy and I'd love the recipe if you'd be kind enough to share.

Marine Cook,[p]Red-eye express is my favorite on pork chops.
-
Eggsellent,[p]OK here you go, it's pretty simple.[p]I like the dark meat end of the pork lion, it's really tender.[p]Cut chops to 1 1/2" thick and rub with olive oil I put Durkeys Grill Creations "Smokey Mesquite" on three of them and Dizzy Pig Red Eye Express on mine. Smoked with a little Jack Daniels chips at 375 until they reached 155 - 160 degrees. Lip smack'n good.[p]Semper Fi,[p]MC

Marine Cook,
I like to take mine off at 145° and let them rest for 10 minutes covered in foil. Here is a picture of some pork chops cooked at the lake on a mini egg.
