Mike, Tomorrow night will be the real test of the results of this one which is now my 5th sub-primal in a year's time. Based on the weight lost (concentration for taste) of 21% I do believe this will be my best New York strip loin yet! Being smaller and thinner I think 35 days was pushing it, but the thicker rib eye sub primal I aged for 45 days has been heaven sent!Re-gasketing the USA one yard at a time

My mistake. I was trying to get a post out while at work and wasn't thinking too clearly. I did mean less than 40°
