after browning the shanks and sweating the veggies, it was around 7pm...let them smoke about an hour with some cherry chunks...
would have liked to go longer, but night was setting in, so added my chicken/veggie stock and brought that to a nice simmer...had to cover cause I wanted to sleep (which, I know, is SO Overrated :S )...kept waking up, like a "first butt cook" and checking temp - kept it around 250-275 but it did get up around 300 once. By 7:30, lifted the lid and all was right in EGGDOME :woohoo:
side note: Ku said "I really don't think the smoke did anything for the dish" -- ever wanted to "B-slap" your mate
