Duck Breast
After a great weekend hunt I find myself with 22 duck breast. [p]I have soaked them in milk overnight and just put them in with some Italian Dressing.[p]I usually quarter the breast and wrap it in bacon (my boys call them "Duck Balls") and sometimes put some cream cheese or jalapenoes in with them. I have never had this manny to cook at once so was looking for some other options.[p]I also have never cooked them on the egg as I bought it this Spring.[p]Smoke them? Low and Slow? Trex? Indirect? Direct?
