I just got back from a local KCBS qualifier. I saw a number of people using both IDS/BDS and bullet smokers with water pans filled with sand. Just wondering if any eggers have tried using the raise grate and cooked a brisket or shoulder at 200-215 directly over the coals. What were your results.
