Fresh Peach Tart W/ shortbread crust

I need to take a minute and write this one down. It was one of the best!
did a simple short bread crust in the food processor and pressed it in a stoneware pan. 1.25 cups flour, 1/2 stick of butter and 2 tb spoons of sour cream. no sugar. whirl till it looks like couscous. pealed and cut in half enough peaches to cover the bottom. laid then center up to hold filling, sprinkled with blueberries and drizzled about 1/2 cup raspberry preserves over that. mixed 1/4 flour, 3/4 c sour cream, dash cinn, two eggs and 1/2 c sugar in the processor and poured over the fruit. not really sweet, tender crust and creamy foamy filling. baked 375ish indirect for 45 minutes.

fresh peaches off our little tree. they are only the size of a golf ball but so very sweet!

I changed my pics this morning to the ones I had on my camera. the others were from my phone and it is acting up.

Looks so good. But what is with the sourcream? What does it do for it?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

Micky it is called lazy LOL I did not have heavy cream and was almost out of milk and did not want to go over town LOL and the crust was not really a shortbread as I did not have any sugar in it but the high butter content and the sour cream gave that wonderful tender texture. I am having a small slice with my coffee this morning



Oh and I had someone ask about my "over town" comment in another post LOL we live on a small island and do have two bridges that connect us to the mainland, but you have to go "over" one of them to get to town LOL so everyone says "over town" here. -
any fruit is going to work well. I think the fresh berries will be best. if you like more sweet maybe add a tad more sugar. the preserves do add a sweet tang though.

I love doing desserts Kim, for most people it is a treat and the "AHHH" to the meal. If I had life to do over about the only thing I would change is going to culinary school for pastry chef. I know I could do it now but I love where I have ended up and fate does know best
so I play on my eggs and treat our customers. that is about the only thing I will miss with the down size of the studio.. doing the special events and the cooking. Neil does not care for them to much and is as happy with an Oreo and a glass of milk :S -

Yep doing desserts for friends (like those at certain Florida mini fests
) sure give you satisfaction...and the friends get a great ending to a great meal.
