The more recipes I cook out of this book the more I like it.
Brined Pork Chops
These chops were simply outstanding. My favorite part (besides eating them, of course) is when I basted them one last time before taking them off the Egg and one of the chops actually caught fire from all the butter and oil it was swimming in.

APL recipes are delicious... I am betting that one is similar to his Cider Brined Pork Chops form Serious Barbecue which we love. Looks delicious... I know you had some good eats there!Large and Small BGE * www.quelfood.com

I almost did the cider brined version, but didn't have any cider in the house. Very similar recipes though. I'm digging the whole marinate/brine then baste/glaze approach.Food & Fire - The carnivorous ramblings of a gluten-free grill geek.

Dave, your brined pork chop looks perfect! I like to brine my pork chops as well, since they've bred the fat out of pigs.
I always love your photography. -
Thanks! I am so tired of factory pork that I keep threatening to show up at my brother-in-law's farm with 4 little heirloom piglets for him to raise for me.Food & Fire - The carnivorous ramblings of a gluten-free grill geek.
