Dinner made me happy last night!

My work has had me feeling a quart or two low lately, so I haven't really done much cooking...I'd been wanting to try this butternut/curry soup. Nothing was all that "fancy" just very good. :) My soup essentials were squash (our own), apples and onions; roasted with apple wood. Pureed with some chick broth, and it was delicious. I did two little pork loins with a lemon caper sauce as well as simple roasted tomato -EVOO and sprinkle of parm. We have tomatoes coming out of our ears so we are trying to eat them up! I took some leftovers to a cantankerous elderly neighbor, and he was so appreciative. Bottom line, it was a good night! Happy Monday... :) here's the squash:
