I want to try smoking my turkey in the egg. Suggestions?

  • Randy, try Brant's Beer Brined Chicken Recipie listed on this site. It works great for turkey and I've used it several times now with great results (See post listed on this page about how many turkey breast can I cook at one time on me egg.)[p]I alter the recipie somewhat by adding quite a bit more cinnamon then what is listed. In other words I use a whole bottle of cinnamon in the brine. If the brine is not enough to cover the bird up I throw in a gallon or two of Orange Juice to add to the flavor. I usually let the turkey brine for 2 - 3 days instead of one day. I follow the rub recepie pretty much but again I use a whole bottle of cinnamon (2 1/2 Oz.) + I add garlic powder and marjorum.[p]Instead of beer I use apple juice for more flavor and add a couple of heaping tablespoons of the rub too boot. Then smoke with pecan and cherry results are fantastic.
