Thank you to all to replied to my post (and e-mailed me even). I got a lot of valuable information which I will print off, then talk to the butcher.[p]If all else fails and I end up with bone and leather then I can flick them over the fence to my neighbour's dog :) The good thing around here is that no one knows what ribs are meant to taste like so if the results are not too good then maybe the diners will not know![p]Cheers,
