Butt & Brisket Capacity

I plan to cook all the meat Sat for my Mom's birthday (73). I have plans for as big a brisket as I can find sitting on the grid on top of inverted plate setter and as many butts as the grid extender can hold - do you think it will hold four good size ones? I've done two up there but seems like they were real large ones and I was just thinking that maybe if I packed em in there, 4 would fit. If fill it full but the themometer still ain't stickin in no meat, you ought to be able to cook em normal, right???

    Chet, if they dont fit, maybe cook them stacked on the brisket for half the cook, and then put the extender in once the meat has shrunk abit, just a thought that they would fit then

    Chet,I did just what fishlessman has sugessted you do. My last big cook was for a party of about 60 people and I stacked 5 big boston butts until they shrunk enough to put in the grid extender and seperate them.....Page

  • PG, I can see how that would work fine and by putting some on the raised grid latter you may still have to for the bark. But just to be sure your cook consisted of the 5 butts and you weren't cooking a brisket? right? but what you are saying is that you think the brisket could have been done on the bottom of your five butts.

    Chet, Yes my cook consisted of only butts that time but I also have done butts over brisket before also and everything went just fine....HTH...Page

    I have fit 3 7-8 pounders on the extended grid before, 4 might be pushing it, but you could always go the extra grid w/ firebricks route if you have access to them. that would give you a little more grid surface for the 4 butts.

    You might ask your butcher for two whole shoulders (before they separate the shoulder roast from the boston butt). That would give you about the equivalent amount of meat and not be such a balancing act on top of your grid extender.[p]Can I have a slice of that brisket? It's going to be mighty good after being basted by the drippings from that pork!
