Tractor's Beef Ribs

I'll be posting my beef ribs cook on this thread. Just finished calibrating the thermometer and adding coal.
I've read a lot of posting here re: beef ribs. I've only done them one other time a few years ago and they were decent, but I didn't cook them nearly long enough.
I had planned on cooking these about 5 hours at 250 like as seems to be the consensus around here. However, I just spoke with Judge Bean (local pitmaster, restauranteur and Texan). When he said they have to cook a long time. I said "yeah, like 5-6 hours, right?". He and one of his cook guys, laughed and he said "we cook ours a lot longer than that. More like a couple of days. He said to cook'em at 180.
So I'm gonna try to stabilize the Egg at 180, cook them til tomorrow around 1 or 2. See how they're doing and if they're not there yet, crank the heat on up to 250 to finish them. The deadline is my birthday party at 4pm.

Unless you have a draft controller 180 will be tough to maintain. Let me know how it works out.

Are you serious, there is no need to cook ribs that long evan with a temp of 180. the bones of the ribs will conduct heat into the rib meat making it take less time to cook. 5 hours should be more then ample time. Interested in hearing how a 20 hour cook goes.

I've not done any beef ribs. But here are some past posts I have saved for when I get around to it. Be sure to read all the way through these posts.

I could be wrong but I think those Tex a kens were pulling your ( ) you fill in the blank! :laugh:
It could be like Popsicle said and those Texans could have been talking about Dinosaur beef ribs on a stick smoker.

Really looking forward to reading about the results on the long cook. You are in for some good eats!!!
When I got my first egg I cooked some beef ribs. They were horrible. 250° dome. The ribs were not real beefy and I cooked to time.
About 4 years later I decided to give it a try again. This time real beefy ribs, 250° dome and I cooked until tender with a toothpick. Some of the best eats I have had off of the egg.
