No finished pics...sorry...the flavor was awesome the tenderness lacked a bit..could have just been setting expectations to high...got 9 more to learn from tho...It really was very flavorful and juicy..

Paid $11 a # which isn't hateful..but certainly not cheap, the prime ribeye was $9 something per#....see my reply to eenie about the results

Will have to be from the next one...cause we ate that without any after pics..I don't take pictures of a steak after 10 years of eggin em..only did this one because it was Prime...we'll see next time.

But when Wess does post pictures, as he did to start this thread, they are of his own cooks. Unlike you. If you'd be nice to him maybe he'll send you some photos to post as your own cooks.

next time there's a sale, you might ask for a roast (if not even the whole subprimal) and try dry aging it. the tenderness will come from aging, along with some great extra flavor. -
I gave a lot of "serious" thought to dry aging this hunk...the fridge I would use to age it is currently running around 63° and being used a fermentation box for some home brew...so I blew off the idea, definately will dry age in the future when the fridge is back down to 33...

i wouldn't do a steak by itself, though some do. a small roast would work fine, maybe a bit of waxed paper stuck to the cut ends.
i find the aging pays off around 28 days (minimum). 21 days is ok too. but a steak at 21 days can really be overly dried out
anyway. just a thought. -
Well, after posting all these steak cooks over the years, I just really don't see much need or sense in my continually posting steaks over and over...not to mention, they are all on my website anyway
