Fibrament Pizza Stone

I am getting ready to try pizza for the first time in a day or so (waiting for the wife to make the dough!!!). I have 4 or 5 stones including the egg but I have always used a Fibrament in the oven. Their website states not to use over a direct flame (it has it's own metal tray). I would assume" with the indirect setup and the eggy legs that I wouldn't need the tray....or does it really matter whether I use the tray or not.

Has anyone experience with this?

Also does anyone have a concern with the ceramic coating on the eggy legs during the cook, is it food safe?

  • You can forget the pan if cooking indirect.

    And I have been known to forget the pan when cooking direct.

    I have not tried using the feet but would not be worried about them.

    I have the fibrament that came with the tray. I use the tray as a "just in case" There is a hot fire rolling and my stone is wider than the plate setter. Most of it is afe but not all. My set up is the plate setter legs down, feet, then stone with tray. Tonight I am trying fire ring out, plate setter legs up, ar, grid and stone with tray.
