OT -Easy Pickled Pepper Recipe?

Been searching past posts...and still seem to have some questions.
Bought some hot cherry and japs and wanted to do a quick, easy pickling...TRYING to avoid the water bath part. Also bought some garlic, tiny local onions, peppercorns, fresh dill and rosemary. Do I need pickling lime? Reading so much about bacteria with the canning process, I'm just trying to make sure I don't eliminate some friends...nor myself for that matter. :S
Anyway, does anyone have a recipe (Sweet, sour, both...doesn't matter) that they can share on a real quick and easy way to do it? I do have the Mason jars with lids and rings, but just don't feel like doing that step with water bath.

The link in bill's post is exactly what you're looking for. Simple and delicious. Throw some aromatics and olive oil in the bottom, fill up with peppers, garlic, onions and whatever, throw the brine in, seal it up. 9 times out of 10 the hot jars will seal (you'll hear a pop), but I don't trust it, I keep them in the refrigerator.
The amount of honey that I use doesn't bring any sweetness that you can detect, just a subtle undertone. If you want it sweeter, add more.
Keeping it out of the water bath keeps the peppers crisp. -

I now put them in the fridge. I guess I'll wait a week or so to crack a jar and try.

Lovely. I failed to mention this in the video, but you're right -- wait a couple days before trying them out. Aren't they beautiful in the jar? Nice mix of stuff in yours.
