Clay Q's Pulled Beef

The local grocery store had Chuck Roasts on sale this week..."buy 1, get 1 free". We have a party coming up and I'm supposed to supply the beef barbeque, so I bought some chucks and did Clay Q's recipe for pulled beef found on page 2 of the forum cook book under "beef".Here's the set up-for the first part of the cook, adjustable rig with a drip pan on the bottom with the chucks on 2 levels
LBGE at 250*
Chuck roasts at 160*internal, per the recipe
Part two of the cook, set up...spider on the bottom with a pizza stone for the indirect heat, DO on the lower level, and another DO on the second level from the top on the adjustable rig
Finished product
Some we'll have for dinner, some will be vacuum sealed and frozen for the party. Thanks for looking.

Dave- It's a long cook and a lot of work, but that stuff is delicious. It's probably my favorite food off of the Egg.

Wow, nice work on those chuck roasts!!! Beautiful pic's and now you got me hungry. Your guests at your party are in for a treat big time. Funny, I just picked up some thick cut chucks from my butcher this mornin, hand cut just for me and guess what I'll smokin down the road!?

I take it you chopped up the bacon as well. Nice ideal. Adds more flavor.
How long did it take to cook the roasts ? I know it is all about internal temp.
