Wish my schedule allowed me to be at the fest but I am consoling myself with a chicken now brining to be spatchcocked later. I also have a tiny (2 lb) brisket for tomorrow night. Any reason why the typical low and slow won't work for such a little piece of meat?[p]

Essex County,[p]No reason a low and slow won't work for the little piece, but the 2 hr/lb rule doesn't work. You'll end up with a VERY tough piece of meat if you only cook it for 4 hrs. It'll need to cook quite a while, since it'll need to benefit from the same breaking down process internally. So be sure and give yourself a good long time for it.[p]Wishing I was in Atlanta...[p]Tonia
