Does anyone have a good recipe for Prime Rib? I'd like it to have a good smokey flavor.

    smokeyfrog,
One thought is to not smoke a Prime Rib Roast, rather just cook it at a high temperature. The reason for this is quality of meat that you are starting with. If you are looking for a strong smoked Beef flavor, then consider cooking a Brisket. You will end up with great chunk of smoked beef at a fraction of the price.[p]Hope this Helps,

RhumAndJerk,[p]I don't like a real smokey prime rib either, if I add chips at all it is just a few during the first hour. But after reading a Cooks Illustrated article from November 95', I have stopped using a 350° cooking temp and gone with 225° to 250°. (they actually call for 200°) They also prefer a sear at the beginning of the cook and I have had good sucess with a sear at the end of the cook. I guess I'm about 60/40 on that technique. Have you ever used a low & slow on a prime? [p]
