YB's Bacon Wrapped PickledWatermelon Rinds

I had never eaten a pickled watermelon rind before this weekend, but everything goes better with bacon ...[p]Anyway, I wrapped them and stuck a toothpick through the concoction. Cooked for about 25 minutes at 350 directon my raised grid to avoid flareup from the bacon grease.[p]WOW!! What a treat. The sweetness of the rind and salty bacon combine wonderfully. This will DEFINITELY be a treat served over and over. I shudder to say this, but I like it better than ABTs (I know, shame on me).[p]
