Canadian Bacon ABTS?

Trying Canadian Bacon wrapped ABTS tonight for a snack. Bacon was good but flared up to much on a gasser. Max recommended some Italian ham, but finding that in Missouri is like trying to find an axle for a trailer on a Sunday.[p]Anybody use any other form of wrap?[p]CWM

    Well, you really can't beat Canadian bacon, eh? But, how about really thin pounded chicken breast or veal scallopini? That's really lean and can be pounded pretty thin. If you do a quick high sear it won't dry out. Maybe put some crumbled bacon into the filling so you still got that pork fat mouth feel going, but the outside is thin strips of chicken or veal? Maybe even a trip to the deli for some Black Forest ham would turn the trick...
