Gator Bait pork and La Bomba-ish?

Did a pork tenderloin on Sunday with Gator Bait's marinade. We had the leftovers thinly sliced in a sandwich for lunch, YUM! Put it on sandwich thins with Trader Joe's Red Pepper & Eggplant Spread. Has anyone else tried this stuff? I think it tastes similar to La Bomba, only sweeter and not as hot. Wonder if adding minced hot Gardenaria would bring it closer? Anyway it is good stuff too. Melted shredded swiss & gruyere on top of it, then the pork. Tasty lunch.

The marinade ingredients (forgot the hot mustard in the pic) with lime juice added.

  • Theresa, looks delicious, I've had a similar spread to that (although not Trader Joe's), I think instead of the hot gardenaria, some finely chopped hot red peppers packed in oil may kick it closer towards a la bomba type flavor, maybe a jar of tiny imported hot cherry peppers in olive oil...
