Just picked up a 1.5# turkey breast. Any suggestions as to a brine, rub, and cooking temp? [p]Thanks in advance,

smokeydrew,
My favorite brine for turkey is:[p]1 gallon water
1 cup kosher salt
1 1/2 oz jar pickling spice (small bottle of McCormicks)
1/2 cup honey[p]1. Boil the first three ingredients.
2. Let cool to room temp and stir in the honey until disolved. If you boil in the honey it will loose flavor.
3. Cool in the fridge and submerse turkey for at least 12 hours - I usually leave it in there a full 24.
4. Pull out turkey, rinse and pat dry.
5. Set up indirect at 325* using apple wood (chips or chunks) until it reaches 160-165* in the thickest part of the breast.[p]It's the best! Enjoy! Joe
